Calzones: Chicken & Broccoli AND 3 cheese, Sausage, Bacon and Spinach

Ingredients for dough: bread flour, yeast, sugar, salt, water and oil

Filling Ingredients:

½ lb. ground pork sausage

1 small chicken breast

1 head of broccoli

1 head of fresh spinach

Fresh Parsley, minced

1 egg

Ricotta cheese

1 ball of mozzarella cheese

Shredded Monterey jack

Parmesan cheese (optional)

Red sauce

Cornmeal

Italian Seasoning

Garlic salt

Fresh parsley, minced

Crushed red pepper

Directions:

  1. Make 1 lb. pizza dough in bread maker, according to directions in manual (50 minutes)
  2. Chop broccoli down to tiny pieces, just 1 (liquid) cup per person
  3. Rinse with cold water then drop into pot of boiling water for 5 mins, drain
  4. Cook 4 strips of bacon, rest on paper towels and then chop
  5. 2 thin chicken breasts, chop into bit size pieces, cook in bacon grease and season with salt, pepper, Italian seasoning and garlic salt
  6. In separate pan, cook pork in 1 T olive oil and Italian seasoning
  7. Combine 1 cup ricotta cheese, ¾ c. mozzarella (hand shred) and ¾ cup monetary jack, egg, fresh minced parsley and ¼ teaspoon of garlic salt and dash of crushed red pepper
  8. Cut top of spinach, rinse and place into a small pot of boiling water; only quarter of an inch of water
  9. Cut the 1 lb dough into 4 quarters, roll thin and place on baking sheet, lined with parchment paper and dusted with cornmeal
  10. Place ¼ of cheese mixture on ½ of the dough rounds
  11. For 2 of the dough/cheese: Top cheese mixture with red sauce, sausage, bacon, and pull the spinach out of water with tongs (drip dry). Fold dough over and pinch edges with fork.
  12. For the remaining 2 dough/cheese: top cheese mixture with sauce, chicken and broccoli. Fold dough over and pinch edges with fork.
  13. (Optional) brush with egg
  14. Bake in pre heated 400 degree oven for 15-20 minutes.
