Ingredients for dough: bread flour, yeast, sugar, salt, water and oil
Filling Ingredients:
½ lb. ground pork sausage
1 small chicken breast
1 head of broccoli
1 head of fresh spinach
Fresh Parsley, minced
1 egg
Ricotta cheese
1 ball of mozzarella cheese
Shredded Monterey jack
Parmesan cheese (optional)
Red sauce
Cornmeal
Italian Seasoning
Garlic salt
Fresh parsley, minced
Crushed red pepper
Directions:
- Make 1 lb. pizza dough in bread maker, according to directions in manual (50 minutes)
- Chop broccoli down to tiny pieces, just 1 (liquid) cup per person
- Rinse with cold water then drop into pot of boiling water for 5 mins, drain
- Cook 4 strips of bacon, rest on paper towels and then chop
- 2 thin chicken breasts, chop into bit size pieces, cook in bacon grease and season with salt, pepper, Italian seasoning and garlic salt
- In separate pan, cook pork in 1 T olive oil and Italian seasoning
- Combine 1 cup ricotta cheese, ¾ c. mozzarella (hand shred) and ¾ cup monetary jack, egg, fresh minced parsley and ¼ teaspoon of garlic salt and dash of crushed red pepper
- Cut top of spinach, rinse and place into a small pot of boiling water; only quarter of an inch of water
- Cut the 1 lb dough into 4 quarters, roll thin and place on baking sheet, lined with parchment paper and dusted with cornmeal
- Place ¼ of cheese mixture on ½ of the dough rounds
- For 2 of the dough/cheese: Top cheese mixture with red sauce, sausage, bacon, and pull the spinach out of water with tongs (drip dry). Fold dough over and pinch edges with fork.
- For the remaining 2 dough/cheese: top cheese mixture with sauce, chicken and broccoli. Fold dough over and pinch edges with fork.
- (Optional) brush with egg
- Bake in pre heated 400 degree oven for 15-20 minutes.
